Banana Pancakes (Gluten Free)

The only thing better than banana pancakes is gluten free banana pancakes...with only 3 ingredients. Yup, that's right! Banana, egg, and cinnamon and that's it! Not only are these babies guilt-free, but they also won't drag you down like your typical pancakes would. Don't believe me? Give them a try!

This recipe is as easy as it gets. You'll need 4 organic brown eggs, 1 tsp cinnamon, 2 ripe organic bananas, and one more banana to slice and put on top of the pancakes when done.

In a medium sized mixing bowl, mash the 2 ripe bananas with a fork. In a separate smaller bowl, whisk together the 4 eggs. Add the eggs and 1 tsp of cinnamon into the mashed banana mixture. Stir until well combined. Optional, but you can add salt to this recipe as well. I usually do.

This will be your pancake batter.


Heat a large non-stick pan over medium-low heat. Spray the pan with a cooking spray first. Use a tablespoon or spoon to drop the batter onto the pan. After a couple of minutes, flip the pancake over, using a spatula. Let the other side cook for another couple of minutes, or until both sides of the pancake are golden brown. Remove from pan and set aside. Repeat these steps until the batter is finished.


This batter does take a little bit longer to cook than your typical pancake. So, don't be alarmed if yours is taking a little while, it's totally normal.


Slice the remaining banana into thin slices. Once you're finished with cooking with pancakes, place a couple on a plate, top them with sliced bananas, and maple syrup. Aunt Jemima is what I grew up on, so naturally....it's a staple in my home.


Serve immediately.

INGREDIENTS:


I use organic ingredients when possible, but you don’t have to.


4 organic brown eggs

3 ripe organic bananas

1 tsp of cinnamon

Pinch of salt (optional)

INSTRUCTIONS:

1. Using a fork, mash 2 ripe bananas in a medium-sized mixing bowl.

2. Whisk together the the eggs and add them into the bowl with the bananas. Then, add in the cinnamon and mix together until well combined. (optional: add a pinch of salt).


3. Heat a non-stick pan over medium-low heat. Spray cooking spray on the pan. Place a small scoop (about a tablespoon or two) of the batter onto the pan. Cook the pancake for a couple of minutes before flipping over. Then flip over and cook the other side until both sides are golden brown, another minute or so. Then, remove from the pan and set aside. (These pancakes take a little bit longer to cook than your typical pancake, fyi).

4. Slice the remaining banana and place on top of your pancake with some maple syrup and serve immediately.
