Hands down the juiciest, most flavorful, gluten-free turkey meatballs you'll ever taste! They are so easy and come together in about 25 minutes! You can pair them with your favorite pasta and sauce or even chop them up and top them on a salad. They're also really great for meal prepping, as they are a good source of lean protein. I promise these will be a new go-to for you!
First things first, you will want to preheat the oven to 375F.
Next, in a large mixing bowl, add in 1/2 pound of ground turkey breast, 1/2 pound of ground turkey thigh, 1/4 cup of gluten-free bread crumbs (see note below if you would rather make homemade gluten-free bread crumbs), 1/2 of a yellow onion (finely chopped), 1 egg, 1 tbsp of fresh basil (finely chopped), 2 cloves of garlic (minced), 1/4 tsp of red pepper flakes (add more if you’d prefer more spice), 1/2 tsp of Italian seasoning, 1 tbsp of olive oil, 1/2 tsp of salt, and 1 tsp of freshly ground black pepper. Mix with your hands until all of the ingredients are well-combined.
NOTE 1: To make homemade gluten-free bread crumbs, you will first need gluten-free bread. Place 3 or 4 slices of bread on a baking sheet and bake in the oven at 350F for 10 minutes or so or until bread is slightly toasted. Then break the bread apart slightly and place it in a food processor. Pulse until they become crumbs. Then set aside. Should make a little over 1/4 of a cup.
NOTE 2: It's important to use both turkey breast and turkey thigh because the turkey thigh has much more fat content, which gives the turkey meatballs more flavor!
Once the meat mixture is well-combined, roll into 1-2 inch balls, depending on the size you would prefer. I usually go with 1 1/2 inch. TIP: You might need a bowl of warm water next to you while doing so, this will help with the stickiness of the meat mixture. Place them evenly on a greased, large, rimmed baking sheet.
Then, place the meatballs in the oven and bake for 25-30 minutes or until the internal temperature reaches 165F. Ready to eat immediately.
