Ranch Chickpea Snack

Hands down the perfect healthy snack! Not only is it super easy to make, but it's also delicious and won't leave you feeling guilty. Chickpeas are packed with fiber, leaving you fuller longer, not to mention they are high in protein, giving you a boost of energy in your day. For this recipe, I went the savory route and coated these babies with a homemade ranch seasoning. And if savory isn't your thing...you can always switch this recipe up and go the sweet or even spicy route (more recipes to come). Bonus: This snack is extremely cost-effective.

First, preheat the oven to 400 F.


Yes, in case you were wondering, chickpeas and garbanzo beans are one in the same. The name Chickpea actually refers to the English name, where Garbanzo Bean, refers to the Spanish name. And because they are used in so many different dishes, it has become so popular that the names are used interchangeably across the nation. This member of the legume family is loaded with vitamins such as B6, Iron, and Zinc, plus the high fiber and protein qualities mentioned above. What's not to love?


Next, in a fine-mesh sieve, wash and rinse the chickpeas, then dry them VERY well. You will need one can of organic (optional) garbanzo beans. Or you can always double or triple the recipe, depending on how much you would like to make.


Peel off the casing on each chickpea. This step is completely optional and does tend to take a few minutes, but it’s definitely worth it. This helps the seasoning adhere to the actual chickpea giving it more flavor, rather than risking most of the flavor flaking off.


Place and spread the peas out on a large sheet pan, then coat the peas with 1/2 tbsp of olive oil.

In a small mixing bowl, stir together 1/2 tsp of dried dill, 1/2 tsp of garlic powder, 1/2 tsp of onion powder, 1/2 tsp of dried chives, 1/2 tsp of dried parsley, 1/2 tsp of salt and 1/2 tsp of freshly ground black pepper until well combined.


Go ahead and sprinkle the ranch seasoning mix on to the chickpeas. Using your hands, mix together the seasoning and olive oil to ensure that all of the chickpeas are fully coated. Make sure to spread the chickpeas out evenly.

Place them in the oven and cook for 30 minutes, stirring every 10 minutes. Depending on your oven, you may need more or less time. Keep an eye on them to make sure that they don't burn.


After 30 minutes, take the baked ranch chickpeas out of the oven and let them cool for about 5-10 minutes before eating. You can personally enjoy them as a snack, or serve them as a party snack for friends and family. Once fully cooled, you may store them in an airtight container or a Ziploc bag and enjoy them later.
