Stacked Caprese Salad

It's clearly summertime and tomatoes are at their all-time peak...which is why this delicious salad right here is the perfect appetizer! It's light and fresh with pops of bold flavors in every bite and the best part... it's absolutely healthy!

Stacked Caprese Salad



INGREDIENTS:


- 2 large very ripe organic heirloom tomatoes

- large bunch of fresh organic basil

- 1 medium-sized ball of fresh organic mozzarella cheese

- olive oil

- balsamic vinegar

- salt

- freshly ground black pepper



INSTRUCTIONS:


1. Cut the tomatoes into 1/2 inch thick slices and cut the mozzarella into 1/4 inch thick slices, then set aside.


2. Wash and dry the basil leaves and set aside.


3. Place one tomato slice on a plate, then sprinkle a tiny pinch of salt on the tomato. Add a slice of mozzarella cheese on top of the tomato, then sprinkle a tiny pinch of freshly ground black pepper on the cheese. Top the cheese with 4 or 5 basil leaves, then repeat the step until you have 3 layers of each.


4. Once the stack is complete, drizzle desired amount of olive oil and balsamic vinegar over the stack.


5. Serve immediately.
