This salad is so simple, sooo delicious, and full of heart-healthy nutrients!! It's easy to throw together last minute, especially when you have an ample amount of ripe squash and tomatoes in your home garden or at your nearby local farmer's market.
Fun Fact: TECHNICALLY this salad contains all fruit. Squash, zucchini, tomatoes, and avocados are all considered fruits. If it develops from the flower-producing part of the plant and contains seeds, it is technically a fruit. If it develops from leaves, stems, or roots it's considered a vegetable.
If you don't eat yellow squash or zucchini often, you might want to, they are so good for you! Yellow squash is high in fiber and manganese. This helps to strengthen your bones and also helps your body process fats and carbohydrates easier. Zucchini is also packed with nutrients, such as vitamin A, vitamin C, and several antioxidants. It's also very low in calories, yet high in water content and fiber, leaving you fuller longer, which in time can lead to weight loss! SCORE! Squash, in general, can help lower your cholesterol and it's also high in potassium, which both factors are great for heart health and we all want that ❤.
Tomatoes are high in vitamin A, vitamin B, and potassium, not to mention they are packed with antioxidants. They can also improve your heart health, skin, eyes, and kidneys.
Avocados are LIFE! Literally, LOL...they are considered a heart-healthy superfood and are probably one of the most nutrient-dense foods out there. They are packed with fiber, potassium (they actually have more than bananas), folate, omega-3-fatty-acids (healthy fats), magnesium, vitamins A, B6, B5, C, D, E, K, and to top it off, they have anti-inflammatory properties!! I probably have way too much avocado than one should have LOL, but I just can't help myself.
Basically, this salad is packed with nutrients...plus it's delicious!
First, you will want to wash and dry all of the tomatoes, yellow squash, and zucchini.
Now it's time to cut all of the salad ingredients. It's up to you and the size of ingredients that you found, but you will want to cut the avocado, tomatoes, yellow squash, and zucchini into 1/2 inch - 1-inch cubes.
Place into a large salad or mixing bowl. Then, add a squeeze lemon juice, a drizzle of olive oil, and season with some salt and pepper to taste. Gently toss the salad until everything is well coated with the dressing and seasoning.
Serve immediately.

Summer Avocado Squash & Tomato Salad
INGREDIENTS:
Cut the following into 1/2 inch - 1-inch cubes:
- 2 cups ripe organic avocados
- 2 cups ripe organic tomatoes
- 2 cups organic yellow squash
- 2 cups organic zucchini
Depends on the size that you find.
- a squeeze of lemon juice
- a drizzle of olive oil
- salt & pepper, to taste
INSTRUCTIONS:
1. Wash and dry the tomatoes, yellow squash, and zucchini.
2. Cut the avocados, tomatoes, yellow squash, and zucchini into 1/2 inch - 1-inch cubes depending on the size that you find works best. Place into a large bowl.
3. Squeeze in the desired amount of lemon juice and drizzle the desired amount of olive oil, then season with salt and pepper, to taste. Gently toss the salad to incorporate the olive oil, lemon juice, and seasoning.
4. Serve immediately.
